Damn son thats a big topic.

In general:

Gathering - Collecting raw materials to process/sell/craft. Great income potential as you also have a chance to find Sharp/Hard enhancement stones and other drops. Collecting requires energy which you can extend by increase knowledge (monster ranks, exploring etc). Somewhat cash dependent since theres a suit that increase gathering level. 

Processing - Processing raw material into more complex items. e.g. ores into melted elements into bars. Always more profitable to sell processed items than raw materials you get from gathering but its time consuming. Has a cash suit that allows you to process from bank (since you can process large amounts due to weight limit)

Alchemy - Uses herbs and other materials to create alchemy stones and other elixirs. Possible profit from stones but has a lot of RNG elements in it. High risk, High gain.

Cooking - basically making food from raw materials. can also create meals from the food you make to create some very needed buffs. Very cash dependent (suit decreases cooking time)

Fishing - active and afk fishing. active produces good money, afk produces some money.. if you really need fish just send workers to fish nodes or buy them from market. Has cash suit to reduce afk fishing time.

Training - Capturing and breeding horses. Very rewarding end game but takes a while until you can make profit. Heavy cash elements (skill resets, death resets etc). Also has training exp cash suit.

Hunting - Dont have knowledge about that sorry :D You basically hunt specific monsters for rewards.

Farming - Good to produce necessary materials for advanced cooking but takes a lot of CP to be beneficial

Sailing - Basically hunting at sea for rewards. Has some nice payouts.

It's not bad. But kind of sounds cooler than it really is. You level it through a daily quest to shoot some birds, through hunting small things like crocodiles and little whales, and then there are bosses eventually as well. Big whale and Fugitive Khalk. They give materials that you can use to craft some nice stuff. But like most things in this game, you have to decide if it's worth the time it takes to go do it...I will also note that you do need to upgrade a musket for hunting in addition to your normal gear, so it does take a little bit of investment to get going in as well.

hunting could be an amazing activity for groups

you join a group of max  5 people via a hunting group search function and  when the group is full a hunting monster spawns somewhere in the world and everyone in the group can see a icon of it on the world and minimap and get also a waypoint to it 
the monster would have less health than a actual hunting event monster but it is still challening because you need to kill it before it reaches a destination (something like a cave or nest or whatever where it despawns and the mission fails)
for the mob to spawn they could simply modify the size of any given mob in the game (a random mob is picked with a size modifier range from 1.5 to 3x the size)  and call it massive instead of wild so everyone whos strolling along this mob know that this mob is part of a group hunting event
this way it keeps entertaining because with all those mobs in bdo you never know what you gona hunt and you might encounter a monster that is in the game but that you never have seen before (hunting a giant glutoni? go for it)
if you are not part of the group you should not be able to participate in damaging the monster and also dont get dmged by the monster either you could still enjoy the hunt by riding along the group as a spectator

this could also be a guild crafting  addition to the game similar to sea monster hunting but instead you hunt after land monster using a horse

All that actually sounds pretty great to me. Definitely doesn't sound the most profitable but sounds the most fun imo. I'll have to check it out.

It's fun to do if you have a group of people who are also interested in it. It's one of the few party based things to do together. Because the whale loot is based on the damage of your group overall, and then ranked among the top few groups. And then those groups all get to go up and harvest it when it dies.

I keep reading about afk skills like fishing but can't find an explanation on how to do that on the xbox.  Anyone know?
